Mine immediately starts to sing “oats, peas, beans, and barley grow…” over and over whenever I make this soup. He does it to drive me crazy…and not in a good crazy kind of way either. Alas, the soup is so tasty, I’m willing to put up with his antics to get a bowl full of barley goodness.
The recipe is from Ina Garten, of course. Why? Because I love her. Unrequited as it may be, her food makes me happy.
The recipe calls for oxtails. I’ve made this soup twice in the last month, and each time I hit my market up for oxtails, they are out. So, short ribs work well as a replacement. The soup is so rich with the short ribs, I can’t wait to make it with oxtails.
